Fruit Salad with Tarragon Syrup



Yield: 8 Servings

Ingredients

  • 1/2 cup water
  • 2 tablespoons sugar
  • 1 tablespoon chopped fresh tarragon
  • 1 tablespoon sliced fresh mint
  • Pulp from 3 passion fruits
  • 2 kiwi fruits, peeled and cut into 1-inch cubes
  • 1 papaya, peeled, seeded and cut into 1-inch cubes
  • 1 pineapple, peeled, cored and cut into 1-inch cubes
  • 1 mango, peeled, seeded and cut into 1-inch cubes
  • 1 orange, peeled and cut into 1-inch cubes
  • 1/2 cup strawberry halves
  • 1/2 cup raspberries

Instructions

1. In a small saucepan, combine the water and sugar. Bring to a boil. Reduce the heat and stir in the tarragon and mint. Simmer for 15 minutes. Cool.

2. In a large bowl, combine the passion fruit pulp, kiwi, papaya, pineapple, mango, orange, strawberries, and raspberries. Pour the cooled syrup over the fruit and toss to combine thoroughly.
