Blueberry Cobbler



Blueberry Cobbler is always an excellent treat!

Ingredients

  • 3/4 pound butter (1 1/2 cups)
  • 2 cups unbleached flour
  • 1 1/4 cups whole wheat flour
  • 1 1/2 cups sugar (plus 2 tablespoons)
  • 1/2 cup ice water, or more
  • 12 cups blueberries
  • Additional sugar
  • Whipped cream or vanilla ice cream

Instructions

1. Cut the butter into small pieces and place in the freezer.

2. In a food processor, combine the flours and 2 tablespoons of the sugar. Scatter 1 cup of the butter pieces over the flour and process until the butter is the size of small peas. Pulsing the machine on and off, add the water, a few tablespoons at a time, just until the mixture begins to clump. Press it into a disk shape. Wrap it in plastic wrap and refrigerate for 30 minutes.

3. Preheat the oven to 425 F.

4. Roll out the dough to a rectangle roughly 20 x 14 inches. Tear off random pieces of dough and line the bottom and sides of a 15 x 10-inch baking dish, allowing some of the dough to hang over the edges.

5. Fill the dough with the blueberries and then sprinkle them with the remaining sugar and butter.

6. Fold the overhanging dough back in toward the center of the dish. Tear any remaining dough into random pieces and place over the top of the blueberries. Sprinkle additional sugar over the dough. Bake for 45 to 60 minutes, or until the crust is golden brown.

7. Serve the cobbler warm with whipped cream or vanilla ice cream.
