Haricots Verts



with Toasted Almonds

This is an easy to prepare side dish that compliments the turkey and stuffing.

Ingredients

  • 1 1/2 pounds of haricots verts, trimmed and cleaned
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup of toasted almonds

Instructions

1. In a large pot of salted water boiling water with the lid off, cook the haricots verts until they are tender and crisp, about 2 minutes. Remove from water and immediately rinse with cold water. Set aside.

2. In a saucepan, brown the almonds until lightly toasted and golden. Remove from heat and set aside.

3. 20 minutes prior to serving, heat the oil in a pan and add the beans. Heat through, season with salt and pepper and toss in the almonds.

4. Serve immediately.
