Bulgur Mint Salad



Ingredients

  • 2 1/2 cups bulgur (finely cracked wheat)
  • 3 1/2 cups vegetable stock
  • 2 cups chopped fresh mint
  • 1 cup chopped red onion
  • 1/2 cup chopped fresh parsley
  • 2 tomatoes, seeded and chopped
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 tablespoon ground coriander
  • 1 tablespoon ground cumin

Instructions

1. Place the bulgur in a large bowl. Bring the vegetable stock to a boil and pour over the bulgur. Let stand for 10 minutes.

2. Add the mint, onions, parsley, tomatoes, oil, lemon juice, coriander, and cumin, mix well and let sit for 30 minutes. Chill.
